The words breakfast and variety rarely end up in the same sentence together, but I’m going to go out on a limb here and share something I eat for breakfast sometimes to mix things up a bit: kale.
Yep, I’ll boil myself a little pot of water and add a couple leaves of kale (or collards), a carrot and some frozen corn if I’m feeling creative. I cook it just long enough to make the color really bright green and then add some butter and viola! breakfast.
Why would I do this to myself you ask? What’s wrong with your smoothie? Nothing, but sometimes it’s nice to have something warm, filling and remarkably tasty.
I was surprised at how readily my body seemed to gobble up the goodness of morning veggies and how good I felt knocking out a couple servings of vegetables before I started my day. Plus, I felt really good and energized all day.
I even tried it on my daughter. We started this when she was 4, and now at almost 9 she’ll still scarf down a bowl of what she calls “grass and carrots” first thing.
We don’t do this every day, but it sure is a nice change of pace, particularly on a cold morning or one of those days when nothing “breakfasty” sounds good. I challenge you to try it once and see how it treats you. Post your results when you get them!
