I’ve recently gotten some requests for this recipe. It’s one of my favorite ways to enjoy a sweet treat without totally killing my healthy intentions.
I adapted it from the recipe you can find in a 2009 issue of Vegetarian Times by changing the oil I use from canola to coconut. Seemed like a good idea since coconut oil is heart healthy (and canola is questionable around GMO, chemical extraction and Omega 6 questions…why go there if you can avoid it with such a tasty substitute?)
Here’s another tip: this recipe makes a big batch, and they are FANTASTIC frozen! Who needs popsicles when you can have these yummy frozen morsels?
I keep these in the freezer for a quick snack, for taking on car trips and kayak adventures. I hope you enjoy these as much as I do!
