Saturday we harvested lettuce out of the garden…planted right before we left on vacation in August, it was now perfect…and a delicious inspiration for fresh tacos tonight. A pound and half of wild caught shrimp from Wegmans, tortillas that are “good enough” from Trader Joe’s and even a convenience spice pack of taco seasoning (pre-checked for MSG and other junk) made prep a snap. I cooked some brown rice too today and added some salsa for flavor as a base for the shrimp (and makes them go a little farther ;))I usually start that in the early afternoon in my steamer to make sure I have it “done” in time for dinner. Best part is we’ll have leftovers for 2-3 meals and Sadie got lunch of refried beans, one of her favorites, on a tortilla for her lunch tomorrow with some cherry tomatoes, and grapes. We do “mexican night” fairly frequently around here–a great way to get some “raw” in and still enjoy a nice cooked meal. Sorry no recipe on this one.
