In my week of “what we eat”, so far it’s been a lot about cooking.  Now, it’s going to be about leftovers.

What’s in my fridge right now that’s edible for actual meals or packed lunches?

1.  BBQ leftover from Sunday’s cooking (I will post recipes and photos on that this week since we are still eating off the same pork shoulder)

2.  Shrimp tacos and spanish rice.  At least one more meal off this.

3.  One leftover focaccia pizza (Michael will probably devour this around midnight when he comes home from socializing after his all day work meeting in Crystal City today).

4.  Some veggies:  green beans, lettuce, collard greens, cabbage.  Any of these can be prepped fast for a side dish.

This is usually how the week goes…I do meal planning on Friday/Saturday…shop one of those days…cook over the weekend or at least get things “staged” so I know what I am doing on busy evenings when I am not in such a great space for planning or logistics.  I’ll hit the farmer’s market tomorrow (Thursday) and that will determine some of my meal planning and what I need to make up in groceries.  This weekend, we have company coming, so I will need to make sure I have plenty of food around…I will get that menu in place after the FM tomorrow and let you all know what’s cooking.

It took me a while to figure out my rhythm of planning/cooking/eating, but now that it’s part of my routine, it is pretty easy to keep things organized and low stress when the rest of life isn’t.  Right now,  I am pretty much in the “reheat” part of my week, so what’s not to love about that?
