Healthy Fruit Smoothies Masquerade as Sweet Treats for Kids

We’ve been enjoying  smoothies for breakfast lately, and I’ve found a wonderful use for the “extra” that sometimes ends up in the bottom of the Vitamix: Smoothie Pops!    My seven year old loves them, and usually we end up sharing a tray of goodies with the whole neighborhood.   Several folks have asked what I put into my smoothie, and here is a general guideline.

Put into a Vitamix or other blender:

Apple slices

Berries (I use a mixture of organic frozen blueberries, raspberries, and strawberries)

A banana if you like them (I do not, so my pops are sans-banana)

Tablespoon of Lecithin granules (it’s an emulsifier and good for general health…it can also be easily omitted)

Tablespoon of Flax seed (fiber, omegas. ALA)

8 oz Kombucha (AMAZING health tonic…I make my own, but that’s a topic for another post)

8 oz your choice milk, yogurt, kefir

ice cubes

I mix all this up in the blender adding more liquid as needed, pour myself a 24 oz smoothie and use the rest in my re-usable freezer pop makers.
