For decades now we’ve heard and read that fat is making us fat, when intuitively we know that past generations ate more animal fat than we do and had thinner bodies. Finally, fats are getting recognition as taste enhancers rather than demon diet busters. Oh, the pies we’ll make!
Of course moderation is still important, and no one will be healthy eating exclusively one food, but this “new” information about fats is certainly a positive development, particularly for those of us who like to cook tasty meals sans guilt.
